Candeal draws inspiration from the ancient cave houses of the 18th century, those underground storerooms where grain and grapes were kept at a constant temperature between 16 and 22 °C. These silent spaces protected the harvest from the extremes of Castile and León, and today they inspire a cuisine that also seeks to preserve flavour, memory and time.

After the harvests, the neighbours would gather in these caves to share the best they had: bread, wine, suckling lamb.

These were simple gatherings, but full of meaning.
